The cooling drafts slow ripening just enough, while the scents from surrounding pines and redwoods infuse the air and, in turn, the wine. This medium-bodied wine features a delicate profile with bright cherry notes and lively acidity. After destemming and fermentation in small bins, the juice aged 16 months in French oak barrels, about 30% new.
