Fall Salad with Apples, Pears and Walnuts
- 1 cup Verjus
- 1/2 cup walnut oil
- 1/4 teaspoon ground white pepper
- 1/4 teaspoon ground allspice
- 1/4 teaspoon dry mustard
- 1 garlic clove, split
- 1 crisp apple
- 1 crisp pear
- 1/2 pound mixed greens
- 1/2 cup toasted walnuts
Whisk the Verjus, oil and spices together.
Slice the apple and pear in 1/4 inch wedges and toss with dressing to coat (you will have some leftover.)
Serve over a bed of mixed greens and garnish generously with toasted walnuts.
