Our goal, whether for wine or juice, is to produce a beverage that is flavorful, true-to-variety and grown in a sustainable manner. Harvesting for juice is fun in spite of the fact that we are harvesting Gewürztraminer grapes that otherwise could be made into more expensive wine. We make it early in the season which gives us a preview of the upcoming harvest. We seek varietal flavors for our Gewürztraminer juice but with enough acidity to counterbalance the sweetness—consequently, the grapes are harvested between 19° and 20° Brix. Navarro produces world-class Gewürztraminer wine and our juice is just as special—the aromas are floral and the yummy peach-lychee flavors are backed up with lively acidity. Refrigerate after opening; juice typically remains delicious for several weeks.
