The starting sugar level in the grape juice for our 2024 Late Harvest Riesling was 30° Brix. We cool-fermented it in stainless steel and stopped the fermentation at around 20° Brix by chilling the wine to about 35°F. Anticipating it might be too sweet given its acidity and alcohol, we also fermented some of the same juice to dryness. After tasting, we found the perfect balance came from adding 12% of the dry wine to the sweet. This Late Harvest Riesling is lush with delightful peach, apple and citrus notes. With its lovely balance, pair it with rich dishes and artisanal cheeses or on its own as a dessert wine.

[above] A Riesling cluster with the lower half affected by botrytis. After being infected with the noble rot, the weather warmed before the upper half was infected while the lower half shriveled, increasing grape sugars, acids and flavors. Because the weather remained dry, the desired rot never spread to the upper half.
