Going back to the basics, Navarro's Gewürztraminer Cuvée Traditional is a perfect match to pair with a recipe using the bounty of seasonal fruit. This recipe capitalizes on a classic no-frills pairing of ham with this wine's fragrant full-bodied character. We suggest a bone in ham steak, large and fairly thick, one that can take some searing on a hot grill. Find the freshest peaches you can from your local store or farmer and get ready to put together a classic taste masterpiece which will really bring the feeling of a summer comfort food to your table. Feel free to up the ante and use a stronger chili, such as a Serrano or Bird's Eye instead of Jalapeño to add extra fire to this jammin' ham dish. And don't worry, the Gewürztraminer will cool your mouth right back down just like an open fire hydrant on a hot summer's day.

  • 2 lb or more bone-in ham steak(s)
  • 6 ripe peaches, peeled diced
  • 1/2 red onion, finely diced
  • 1/2 clove garlic, minced
  • 1/2 clove garlic, whole
  • 1 Tbsp. zest of orange
  • 1/4 cup palm sugar, or brown sugar
  • Juice from one lime
  • 1 Tbsp. orange juice
  • 1 Tbsp. olive oil
  • 1 Tbsp. fresh mint or pennyroyal, chopped
  • 1 Jalapeño, diced and seeded
  • 1 pinch nutmeg
  • Salt and pepper, to taste

Set up grill and heat until ready. While the grill is heating, mix peaches, onion, minced garlic, orange zest, sugar, lime juice, orange juice, jalapeño, nutmeg, salt and pepper in a bowl and allow to set. Rub ham with garlic clove and grill on both sides. Be careful not to over grill the ham as it is already cooked. Transfer cooked ham steak to platter, cover with coulis mixture and serve hot.
